Piacenza tomato cold soup with chive and Balsamic Vinegar of Modena Ponti
Ingredients
10 branch tomatoes
a bunch of parsley
a dill bunch
6-7 basil leaves
garlic 1 clove
extra-virgin olive oil 2 table spoons
Balsamic Vinegar of Modena Ponti Aged 3 Years
vinegar a few drops

Preparation
Blanch the tomatoes for one minute, peel, seed and purée them. Add the herbs, the fresh garlic without its core, oil, salt and pepper. Let it marinade for a few hours. Remove the garlic and process in a blender. Add a few drops of Balsamic Vinegar of Modena Ponti Aged 3 Years and first-press oil. Place in some bowls, refrigerate for a couple of hours and serve with some chive straws.
