Spaghetti with special ragout and Balsamic Vinegar of Modena Ponti
Ingredients
1 small onion
1 scallion
carrots
fresh tomato purée
parsley
sage
butter
oil
salt
Balsamic Vinegar of Modena Ponti

Preparation
Brown a quarter of the sliced small onion and the scallion in hot oil and add a few sage leaves. In another pan, prepare a carrot sauce by adding the same quantity of oil and butter, some parsley and the tomato purée; cook on low heat. When cooking is finished, add the browned onion and scallion and boil for 3-4 minutes. Pour the sauce on spaghetti al dente. Add a tea spoon of Balsamic Vinegar of Modena Ponti per person and mix rapidly. You may also add some excellent Parmigiano Reggiano directly in the plate
