Steamed crawfish marinated in pink pepper and Ponti Gastronomic Glaze
Ingredients
Shelled crawfish 300 g
cucumbers 80 g
juice of 1 lemon
pink pepper
wild cicely (or thyme)
Ponti Gastronomic Glaze
extra-virgin olive oil 0.5 dl
salt and pepper

Preparation
Shell the crawfish and butterfly it. Let it marinate with the lemon juice, pink pepper, salt, pepper and wild cicely for ten minutes. Peel and slice the cucumbers and season them with oil and a pinch of salt. Steam the crawfish for a couple of minutes, lay it on the cucumber salad and dress with the Ponti Gastronomic Glaze. Garnish with some wild cicely. You may replace the crawfish with fresh prawns.
